Spinach Pesto Pasta

I recently started my vegetable garden and made the mistake of planting large leaf spinach, my garden is currently overrun with spinach and there is only so many spinach salads a girl can take.


I was wondering how I would best be able to cook as much spinach as possible when it came to me………




I have previously created a pesto and asparagus pasta dish but that was made with oil and I am trying my best to remove any unnecessary oils so I have tweaked that recipe to include spinach and remove any oil.


Spinach Pesto Pasta

A quick and simple pasta dish with a big punch of flavour


  • 2 cups chopped spinach
  • 3 cloves garlic
  • 1/2 cup chopped fresh basil
  • Spelt pasta for 2 people
  • 1 lemon
  • 2 Tbsp pine nuts


  1. Cook pasta as per instructions, once cooked save one cup of water from pot then strain pasta.
  2. 2. In a blender add spinach, garlic, basil, lemon juice, pine nuts and 3 tbsp of the saved pasta water. Blend till everything has combined into a chunky paste, add more pasta water till you get your desired texture.
  3. Divide the pasta between 2 bowls, add the pesto mixture and mix till pasta is evenly covered with pesto.


There you have my oil free spinach pesto recipe, super easy and it helps get through large spinach supplies.
